大将を勤める橋場 俊治氏は、若くも18歳で銀座「鮨かねさか」にて修行を始め、29歳の時には「鮨さいとう」に入門。齋藤孝司氏の2番手として「鮨さいとう」で6年間の経験を積み、才能が認められ、同店の個室を拡張して店を構え独立を果たした。現在では「鮨しゅんじ」の大将を勤め、元麻布にて完全独立し、若手の寿司職人として注目を浴びている。
