店主・谷本 征治氏は若い頃から鮨屋、小料理屋で料理人経験を積み、20代の時には茶道の心得も学んでいる
日本料理に決めたきっかけは京都の日本料理店の料理を見た時に「美しい」と思ったからだと語っている
滋賀と東京にある茶懐石で8年、南青山にある懐石料理で3年間料理長の経験を持っているベテラン
その懐石料理の料理長、茶道にも造詣のある谷本 征治氏が2017年に独立しオープンしたお店

The owner, Mr. Seiji Tanimoto, has been gaining experience as a chef in small eateries and sushi restaurants since he was young, and he also learned the art of tea ceremony when he was in his twenties.
He says he decided on Japanese cuisine because he thought it was "beautiful" when he saw the food at a Japanese restaurant in Kyoto. He is a veteran chef with eight years experience at Chakaiseki restaurants in Shiga and Tokyo, and three years' experience as head chef at a Kaiseki restaurant in Minami Aoyama.
Kaiseki Head Chef and tea ceremony expert Mr. Seiji Tanimoto opened his own restaurant in 2017.

오너 셰프인 세이지 타니모토씨는 어렸을 때부터 간단요리 및 스시 레스토랑에서 셰프로서의 경험을 쌓기 시작했으며 20대에 다도 기법을 배웠습니다.
타니모토씨는 일본요리의 길을 택한 이유를 처음 교토에 있는 일본요리전문점에서 음식을 본 순간 “아름답다”고 생각했기 때문이라고 설명합니다. 그는 시가와 도쿄에 있는 가이세키 레스토랑에서 8년간 경험을 쌓고 미나미 아오야마의 가이세키 레스토랑의 헤드 셰프로서 3년 간 경력을 쌓은 베테랑 셰프입니다. 가이세키 헤드 셰프이자 다도의 전문가인 세이지 타니모토씨는 2017년에 자신만의 레스토랑을 오픈하였습니다.
